Yes to all. You can partition your SSD and during Sequoia installer just choose the new partition.
For Sequoia you'll need to make sure you've updated the kernel patches and kexts. Add a Max Kernel to any kexts that are specific to Ventura as not to cause a panic on Sequoia.

You should also be able to install Sonoma which should work better I think.

Is SATA set to AHCI in your BIOS?
Add the following kext to your EFI kext folder and add it to your config. While in your config add this as a boot arg, e1000=0
