Yes, the Beelink system you listed above would be compatible with macOS.
NootedRed.kext will get the AMD Integrated GPU working in macOS.
Storage would be down to you, as the system can accept 2 x NVME drives with a combined maximum storage capacity of 8TB (2 x 4TB).
Specification for built-in storage. 500GB is the standard drive size.
Plus you have the option of using external enclosures with additional storage if required, via USB3, Type-C or Ethernet/Network.
Built-in WiFi & Bluetooth is based on Intel AX200 chipset, so this will be supported by IntelWireless kexts etc.
The dual Ethernet ports are reported as 1GB, but I can't find any information on which chip is used by the controller, so no idea which kext(s) would be required for them to work in macOS.
