Sorry for the late reply, weirdly enough i couldn't get Catalina running with that but when i tried both Catalina and Big Sur it said, " An internet connection is required to install macOS."

Your motherboard uses and Intel GB Ethernet controller. So you need to replace the RealtekRTL8111.kext with IntelMausi.kext for your Ethernet to work.

You also need to remove the Realtek kext and add the Intel kext details to the config.plist, otherwise OpenCore will not inject the kext.

Copy of IntelMausi.kext is attached.

I provided a kext for your Ethernet port to work. so why don't you use the Ethernet for the internet connection?

For some reason Ethernet just doesn't connect its a Intel 1211 Gigabit card so it should be supported.

Which version of macOS are you trying to install, Catalina? If yes, then try the SmallTreeIntel82576.kext attached.

If you are looking install macOS Monterey, you need to use the latest beta of the AppleIGB.kext, which I have also attached.

Thankfully I finally got ethernet working but the install crashes right when it says " 15 Minutes Remaining" even though the bar is full, the bar also start at 3/4 full when you start it i did try enabling LegacyEnable, LegacyOverwrite, and WriteFlash but no changes

Thankfully I finally got it somewhat working, I got it running Catalina but there is some issues. First shutdown/restart don't work even though sleep works fine. Second WiFi still doesn't work (some reason Bluetooth works) Lastly when signing into iServices like the main one you sign into from System Preferences work but iMessage and FaceTime don't any ideas? ( I would like to update to Monterey if possible)
