Hello Guest. Before you post check the Troubleshooting guide here, Dortania Troubleshooting
That's a kernel panic but can't see the important stuff at the start of it. Upload your EFI and we'll see if it's something in there. Also add your specs to your signature here, https://forum.amd-osx.com/index.php?account/signature
There doesn't seem to be any issues in your config. When you boot to OpenCore clear the NVRAM. If the option isn't there press the spacebar. See if that fixes it.
