Those acpi errors are there also in your previous hang?
If so extremeXT gigabyte patches seems to work bad here
Or you have added in wrong way in your acpi config.plist patch section
 
in this config (overwrite my previous one ) i have enabled a patch useful for AM5 platform (casey one) and i have disabled also Visual patches (not useful for AM5 platform)

Same result but when I am opening your new config.plist I don't see any additional SSDT enabled. Here is the EFI with your initial SSDT added and your latest config.list send.

No problem before.
What I did:
Duplicate my current EFI
Added your SSDT
Overwrite my config.plist with your and reboot.
I see that with your config.plist you unchecked all ongoing SSDT to keep only yours enabled (with both config.plist send) as per EFI just sent above

@Mac Arthur have you tried the second config plist posted here?
it maintains some of SSDT you used before
i would like understand if you have same ACPI errors i see if you use only one ssdt (basic one i put in your config)
 
I would love. Can you send it again? When I open both of them I see only one SSDT enabled. Maybe wrong sending ;-)

i do not know if they are relevant for your problem, but in the past AM5 Gigabyte boards need of some ACPI patch
I would try to start again with Gigabyte EFI you con found in this forum and try to adapt it (i would also try to downgrade your BIOS but this is more risky and better to do other tries before)

The EFI we are currently working on is the original one from Casey in this post.
So far what I adjusted is:
  • only one MMIO needed to go up to the boot on internal SSD after install of Ventura.
  • This morning I have been working on USB mapping port using the kext USBtoolbox and I disabled the USB SSDTs.
  • I checked again my BIOS (V4) online with Casey general recommendations and configured following @KWODO post.
And I still have the same endeless rebooting process.

Then just by curiosity I tried to install Ventura with the successful EFI of @KWODO on OC 0.8.7.
Very strangely I can't even get the macOS installer, even after reset NVRAM. Just get my internal SSD and Windows pickups at OC launch.
All in all I am a bit confused at the moment... but I don't (never) give up...
Here is my latest EFI under test before you were trying to change a few SSDT.

Casey has an Asus and his EFi is a very good EFI where you can take some ideas
Gigabyte board need some acpi patching

He has just different CPU RAM and GPU. I thought it would be a good starting point. As it is more an "intellectual challenge" for me I don't need a powerful Hack.
Regarding @CaseySJ he is the one who convinced me to swtich from Gigabyte Z370 to my curent Z490 Vison D 3 years ago. He is an amazing contributor to both communities...
And he is the one who gave me the idea to embark in the AMD advanture a year ago. But impossible to find his MB in Laos. We are a "developping" country :)

if you like backup yours and try this one based on gigabyte users EFI (updated it and changed core counts for your CPU addedd target 67 to see debug log)

If you like post then opencore log
before trying to boot with this efi reset Nvram from opencore menu

may i ask also to use EFI i post without any modification on it?
check it with no invasive configurator (obviusly)..but do not save anything different ;)

i see in your signature Ventura 13.6.6 installed in that gigabyte? So problem is updating it to Sonoma?
