Update to the latest release of OC before upgrading, make sure you use a compatible SMBIOS and then everything should be fine, except Broadcom WiFi is broken. You'll need to take some extra steps to get it working.
Don't take shortcuts. I used to do that myself but i guarantee you that everything works the best when you build your own EFI. It takes a bit of time and patience at first but it's defenitly worth it. Just follw this amazing guide https://dortania.github.io/OpenCore-Install-Guide/prerequisites.html

Today i tried updating my perfectly working hackintosh from OC 0.7.1 to 0.7.5 in order to install Monterey. I started from scratch and created a new EFI according to the Dortania guide. I applied the new kernel patches, update my kexts and enabled ProvideCpuInfo quirk.
