It's best to make the config.plist and EFI yourself from scratch, using the guide https://dortania.github.io/OpenCore-Install-Guide/
It's not worth cheating using hardware sniffer and OPCore Simplify, as you'll learn nothing, as it often get's it wrong - so you would have no idea how to fix it.

Hi everyone. I tried OPCore Simplify, and nothing worked for me. In any case, I had to tweak the entire configuration myself using Dortania's guide. But I learned a lot and everything works for me. I posted a thread about my EFI here on the forum. I also have a B550 motherboard. So, you were right: don't rely on it, study it and do it yourself. There are no universal methods. Sorry for my English, if I wrote something incorrectly.
