Ryzen 5900X
32 GB Ram at 3600
M.2 Samsung 980 Pro 500 gb

You don't say which graphics card you are using. This is really important component and modern AMD Navi (RX 5000)/Big Navi (RX 6000) series cards are the go to option for any recent macOS release.

Not sure if your Samsung drive is optimised for running macOS. Some Samsung drives are known to be problematic with really long boot times due to Trim issues in macOS.
