Here is an OpenCore EFI based on my Asus ROG STRIX B550M/Ryzen 7 5700G system. It has been adapted to suit your Gigabyte B550M system, as best I can.

It will boot Monterey, Ventura and Sonoma.

I would not recommend installing Sonoma 14.4, as it has been problematic with real Macs and Hacks. Hence Apple releasing Sonoma 14.4.1 so soon after 14.4. Sonoma 14.3.1 might be a better option in the first instance.
