Easiest first time build

I just purchased a second NVMe for my home Windows PC and have been wanting to move back to mac os for work so I can get my iMessages and Facetime calls. The SSD is the WD SN550 1TB which I read is a popular choice for hackintosh builds, the rest of my PC specs are as follows:



I don't think I will have an issue getting up and running I'm just not sure what the best version is to ensure I can get iMessage and Facetime without too much hassle?
