You definitely want to enable logging in your /EFI/OC/config.plist, so you can see why it stops booting. I'm rather new to this whole Hackintosh thing, but I don't know what kind of compatibility exists for Nvidia GPUs either. Once you have visible logging, OpenCore's troubleshooting guide is immensely helpful in diagnosing common issues: https://dortania.github.io/OpenCore-Desktop-Guide/troubleshooting/troubleshooting.html

Sorry to divide this into two posts, I studied the screenshots afterwards and noticed something. I would suggest slimming down your /EFI/OC folder(especially the .aml files in /ACPI) to eliminate errors that may occur related to things you don't even need. The guide here is helpful as far as getting rid of some unnecessary files: https://dortania.github.io/OpenCore-Desktop-Guide/installer-guide/opencore-efi.html

Use a standard SSDT-EC-USBX file. Delete the rest of the files in ACPI for now. If that fixes your problem, it’s one of the files you deleted. Add them back one at a time to see when the problem starts happening again...
