you can't find it b/c you did not copy your Working EFI from USB to your macOS Big Sur HDD. just use your USB with working EFI and boot it up. your Big Sur will show up on OC picker mode.
You need to mount the EFI partition for the USB, then mount the EFI partition for your macOS drive. Use Hackintool or another tool to mount the EFI partitions. Then you can simply drag and drop the EFI folder from the USB to the macOS EFI partition.
