for AM5 system, you need to Generate your own SSDT files to work with your hardware like SSDT: Plug-alt.aml, EC.aml and USBX.aml. also it required to have proper configuration for Mmiowhitelist entries to make it work properly. set SecureBootModel to Disabled. the rest setup just like AM4 with B550/A520 chipset. still you need to follow the OpenCore Guidelines for setting up your config.plist, they have AMD section in there. also if you have correct setting up your config.plist and it still won't work your DSDT might need a patch b/c a lot of. AM5 Firmware is not working properly for mackintosh. I hope this information will help your mackintosh.

I modified files(adding acpis/kexts, changing platforminfo, etc) but it is not booting as same error, did i missed something ?? attatching updated EFI folder
Ciao ITStory
your EFI misses an impotrant part for that platform:
MMIO
for now see if you do a step forward with this config .plist
I skipped that part but you should check better your EFI

I said you in above message:
MMIO
Some AMD platform need to use DevirtualizeMMIO quirk and then to build a proper MMIO whitelist

In config i posted i bypassed this using a quirk's combination..but you should build a proper one for your system
Also, your Gigabyte motherboard could need of an ACPI patches to avoid a bug Gigabyte has (using SSDTTime produces this patches for you
