Hello! The specs in my signature, will the sanity check out? Which version of MAC OS should i use and why? I am here to learn because it is super interesting. I will probably use the Kingston SSD for this purpose and not use the NVME. Thank you for all input.

Short answer: NO.
Unsupported GPU: Replace it by a Radeon Navi 2 (not 6700) or older.
The Samsung SSD is probably not optimal.
