USB 3.0 doesn't work
Gigabyte have a funky IOMMU controller. Try enable it in the bios. Works for me.- saufisapph

OpenCore doesn‘t „reboot“ to the BootPicker
I have the same problem and my pc spec are nearly identical to you. Happens to me quite sometime ago and only after i ran initial installations on the drive.
