Every time i boot via OpenCore, it resets the boot order I've set in the BIOS - and inserts itself to be the first/default option. Windows doesn't do that. My plist is enclosed. Also, when I select OpenCore from the boot menu to boot from directly, it goes straight back to BIOS. I'm aware of...

OP, I did what you did and I think it has improved some of the jank from my 3900x/X570 install too! For example, I had nasty stutter when opening folders that are in the Dock - it's now gone. The system feels more responsive, where it felt like there's always a small lag (not as severe as yours).

I'm getting HDMI sound from my RX 580 but not always - meaning the audio output device is sometimes just not there. I have yet to find a rhyme or reason to why is this happening.

RX 580 on X570-p, 10.15.6 on OC 0.5.9. According to iStatMenus, RX 580 idles at roughly 900 MHz and takes 135W, which is ridiculously high. In Windows 10, it idles at 300 MHz. Anything I can do? Thanks!

Sawtoothing is normal with modern AMD CPUs. You can set manual fan curves in BIOS to lessen this.

I've got the correct disk auto-selected but the picker waits for the enter key indefinitely. Is there a way to auto-confirm the boot disk without requiring me to press enter? Thanks!

Yes, picking the disk in System Preferences/Startup disk does the trick, even if it's the only disk there is. Non-functional Bootcamp is still there but that doesn't bother me.
