SmallTree does not work on Monterey, you'd have to either use Wifi or get another supported NIC. Either USB Dongle or a PCIe card would do.

For Monterey you need a recent OC and the latest Kernel patches, the old ones you're using don't support it.

Apple defines which metrics are available on which SMBIOS. That is the most limiting factor in monitoring on macOS.

You can reproduce the long boot times on Samsung NVMe SSDs on Big Sur by increasing the ApfsTrimTimeout in OC. I suspect rather that Monterey broke the TRIM timeout instead as the SSDs were known to have TRIM issues before: https://github.com/dortania/bugtracker/issues/192

The newest macOS you can run with a GTX 10 is High Sierra.

I think "NVME assert failed" is a sign of the MSI BIOS issues. So with a Zen 3 you're basically locked to Big Sur for now. So you could switch to a Zen 2 and downgrade the BIOS to a working one, or replace your motherboard with a non-MSI one.
