No worries, I'll do my best to keep Windows from updating itself as this is when I've noticed things going wonky in the past - my previous Hack was an i7 8700K so hopefully it's an odd quirk of the previous machine.
Update time!
Did a bit of a wonky (read: lazy) USBTool mapping before unplugging the machine to remove the M.2 Wifi card and plug in the Broadcom card to the USB header on the motherboard.
Restarted the machine and was able to get back into MacOS. Phew! Happy to say that handoff stuff worked...
