Problems booting into Catalina installer with OpenCore

Hello everyone. I've been having many one big issue so far during my hackintosh journey. When I boot from my OpenCore USB, the only option I see is "Windows". Nothing else. I have tried every solution I know of to try and fix this. I have tried setting my "ScanPolicy" value to 0, I have tried using 3 different Hfs drivers (those being OpenHfsPlus, VBoxHfs-64 and the stock HfsPlus driver). I have as well tried reinstalling OpenCore completely on a brand new USB. Still nothing. If anyone is able to help me it would be greatly appreciated as I have been trying to solve this issue for the past 3 days.

CPU: AMD Ryzen 5 3600 6-Core
GPU: Radeon RX 580
RAM: 16 GB
Motherboard: ROG Strix B450-F Gaming
Audio: AMD Audio
Ethernet Card: Intel I211 Gigabit Network Connection
