Forbidden sign and text at base of Verbose list saying 'Still waiting for root device' usually means the USB port containing the installer has not been activated when OpenCore hands over control to the OS.
This is likely caused by you using iMacPro1,1 SMBIOS when trying to install Tahoe. iMacPro1,1 is not a supported system for Tahoe. You need to change this to MacPro7,1 in your USBPorts.kext/Contents/info.plist and your config.plist.
You should not have the XhciPortLimit Quirk enabled when using a custom USB configuration/kext.
You do not need SSDT-PMC.aml, this is an SSDT required for 300 Series Intel systems. It is never to be used with an AMD system.
I don't believe you need all the boot args in your config.plist.
Revpatch=cpuname is already present in the NVRAM > Add section above. Adding revpatch > String > auto,sbvmm would be a better option. You would also need to add the additional string entry to the NVRAM > Delete section.
-no_compat_check is not needed, I haven't needed it on any of the B550 systems I have built or configured to run macOS.
csr-active-config should be set to <03080000> not <FF0F0000>
Most of these changes have been applied in the EFI-rev1 folder attached below.
You need to add the Serial Number, MLB, ROM and SystemUUID entries for your new MacPro7,1 SMBIOS. This is all you need to change/add to the EFI.

If you are on a Gigabyte/Aorus or an AsRock motherboard, enabling this option may break certain drivers(ie. Ethernet) and/or boot failures on other OSes, if it does happen then disable this option and opt for npci instead
2020+ BIOS Notes: When enabling Above4G, Resizable BAR Support may become an available on some X570 and newer motherboards. Please ensure that Booter -> Quirks -> ResizeAppleGpuBars is set to 0 if this is enabled.
