Try remaking your macOS Installation drive/app, as it could be your installer is borked.
- Erase the current macOS Installation drive.
- Delete the macOS installation app you previously downloaded.
- Download a new copy of the Sonoma installation app.
- Format your USB pen drive as HFS+ with a single partition in Disk Utility, name the drive 'USB'.
- Use the following Terminal command to restore the app to your USB installer.
- sudo /Applications/Install\ macOS\ Sonoma.app/Contents/Resources/createinstallmedia --volume /Volumes/USB /Applications/Install\ macOS\ Sonoma.app --nointeraction
- When the installation has completed, quit Terminal.
- Copy the EFI folder from @lessurone to the EFI partition on your USB installer.

Also doesnt it need to be EFI boot, then pick ur OS?
Your USB drive is not set up correctly, if done right at boot it will show an icon of the version of macOS you are installing and say InstallSonoma or some such label.I will send you a screenshot of whats going on tomorrow since its 1:50 am
