it's the same issue with me, cannot change CPU name ..

on High Sierra, Mojave. it's can do
but Catalina can not .. I don't know why?

In your Clover config set the CPU type to 0x0204 which should set it as Unknown. Let me know if that works and I'll explain how to change the name.

I couldn't find "CPU type" in config.plist

so i was able to edit config.plist with the cpu type number and verify that i see unknown cpu kind but am not able to successfully edit and save when i change unknown to something else. it says i don't have those priveleges.

I have to add CPU Type : "0x0204"
But on About This Mac => Processor: still not display CPU model.
it shows only CPU Clock Speed

My CPU is Ryzen 1700X
