Finally, after a lot of hurdles and scratching my head, successfully installed this in my system. I have installed hackintoshes in the past but this was my first time using OpenCore. And it was kinda fun and also frustating. For those of you who are attempting to install macOS on a similar hardware, here are a few suggestions that might help:

  1. Follow dartonia's guide properly, he seemed to cover most of it. And if you get stuck, please ensure that you have all the necessary kexts and ssdts. This is the most important part! I mistakenly left our VirtualSMC at first and it would get stuck every time, I couldnt even find no reason for it to be stuck because I thought I had included VirtualSMC in the first try but nope.
  2. I had to play around with SSDTs a lot too in order to properly boot into the OS.
  3. Also, if you are installing from Windows and you intend to dual-boot the OS. You have to rename the boot manager file from Microsoft folder, otherwise you will lose the function to boot into Windows after mounting the EFI partition and replacing the EFI on your macOS. You can follow elitemac's video on youtube regarding dual boot and specially the part where he renames the bootmanager in order to enable the dual boot functionality using OpenCore. Or you can copy the microsoft folder to somewhere safe before pasting your EFI and then after a successful restart paste the Microsoft folder back into the EFI partition..
  4. Also , make sure you have both , USBToolbox default kext present along with UTBMap kext. Otherwise, you will be presented with a screen that will show you to plug in a Magicmouse or Trackpad. This was the one that was most annoying to fix. As per the instructions of the USBToolbox program , I thought using only UTBMap will work, since I was premapping my USB ports, but turned out you had to use both.
  5. Also , if you are installing from windows and you intend to dual boot the OS. You have to rename the bootmanager file from Microsoft folder, otherwise you will lose the function to boot into Windows after mounting the EFI partition and replacing the EFI on your macOS. You can follow elitemac's video on youtube regarding dual boot and specially the part where he renames the bootmanager in order to enable the dual boot functionality using OpenCore. Or you can copy the microsoft folder to somewhere safe before pasting your EFI and then after a successful restart paste the Microsoft folder back into the EFI partition.
  6. After agreeing all the terms and conditions, macOS will start downloading InstallPkg in order to download the OS which is like 12 gb in size , so make sure you have a good and stable internet connection at the time. My dns was conflicting with something and I kept getting error (Use command + L to turn on log) while downloading. PkDownloadError8. At the time, I didnt understand what could have possibly be the reason of the issue because my internet was fine. But, googled around a bit and saw some google dns doesnt go well with apple servers , so switched to OpenDNS. Here's a trick to test it before downloading macOS, when you are presented with the userspace where you have 4 options, disk utility , time machine etc. There is also safari available there. Use safari to search for something on google. If it works, I am pretty sure, the download will go smoothly. You can also ping some other servers using terminal. And dont be scared if it shows like 11 or 12 hours till installation. It might be due to slow download speeds.
Those of you who are willing to try it out on something that is not well supported, hopefully this will be of some use. And if you get stuck, google is your friend. This forum was incredibly helpful as well. Anyways, thank you for reading. And if you have some questions , you can let me know in the comments. I will try my best to give you a solution.

My setup :
AMD Ryzen 5 7600X | RX 6700XT | 32GB DDR5 5600mhz | 980 Pro 1 TB | MSI PRO B650M-P

Whats Working:
Pretty much everything I tried

Not tested:
Video editing softwares. Wifi, bluetooth. I didnt include bluetooth and wifi related kexts because I dont have bluetooth and wifi.

Not working:
1. Mic
2. Sleep (Maybe there is a fix, but havent tried it out yet). You can let me know if you have one!
3. Apple Music
4. Apple TV (DRM related contents in general)

Could I see your EFI by chance? I have the same CPU and MOBO, would be helpful to see how you got yours working.

That post is from last year so he probably isn't watching the forum being it is his only post. Might try to direct message instead but even then you may not hear anything,

@kcsmithh35 This is what I used on my MSI MAG X670E Tomahawk WiFi. USB ports not mapped as yours will be different, kexts are included for intel wifi/bluetooth but disabled and core counts adjusted down to 6. Whatevergreen.kext replaced with NootRX.kext as you have an AMD 6700XT graphics card. Sound won't work either without tweaking. See if it helps and good luck. Sonoma or Ventura only....

Really appreciate you @leesurone. I stumbled across this thread last night: https://forum.amd-osx.com/threads/ryzen-7000-testing.3318/page-84#post-25894
and after following @CaseySJ 's instructions for AM5, in addition to dortania guide, FINALLY was able to get Ventura fully installed and working for what I need. Thanks a ton!
