So TLDR, created a bootable USB installer, mounted the EFI partition on the USB installer, added the EFI folder containing the latest OpenCore and all the updated versions of the kexts I use.
Copied the same EFI folder into my install SSD's EFI folder - reboooted and tested launching the USB installer via the now updated Opencore 1.0.6 - it worked, which in my experience means it'll install fine.
Installed over the existing install.
Checked everything worked - it did, but I did re-enable trim in terminal, as it wasn't enabled on my SATA SSD, but was on my NVME (had this before), that went fine and once rebooted, was showing enabled.

Ran a Time Machine backup for good measure
I kept the USB bootable installer for any re-installs or future issues should I need to go back to a known working version of MacOS.
