That AMD setup will work in Monterey or newer, when you add NootedRed.kext to your setup.
Not sure which Bluetooth and WiFi dongle(s) you are using so no idea if they will work in macOS.
Look in the Success Stories forum to see if a similar setup has been used and if a working EFI folder is available.
