The Nvidia dGPU in your specs is not supported in any version of macOS. This discrete GPU is a dead end when it comes to macOS.
Your AMD CPU doesn't have an integrated GPU (Radeon Vega graphics), so you won't be able to run macOS with any graphics acceleration. If you do get it installed it will be glitchy, have lots of artefacts and not be a good experience.
If you can't or don't want to change your unsupported Nvidia GPU you are best staying with Linux or Windows.
