Minisforum is releasing a Ryzen 9 5900HX based mini PC system with (get this) - a RX6600M gpu with 8GB of RAM!
As we already know the RX6600M works in Monterey, this would make it an ideal Mac Mini alternative (and one that also can run x86 Windows).
Minisforum Elitemini HX90G will be available in mid-November starting at $799 for barebones and $1269 for 64GB RAM & 512GB SSD.

Is it hackintoshable?
Yes I believe it is. It is similar spec to the Lenovo Legion 5 AMD 5800H w/ RX6600M which already boots Monterey so yes it should.

I would like to know but my case is a little different. I bought an AMD Ryzen 9 5900HX with Radeon Graphics, and, if I'm not mistaken, it comes with a vega 8 graphics card which is incompatible according to most of the forums I searched. I would love for someone to be able to point me to a solution and not just say: oh that's impossible...that's the easiest answer.

Sometimes the truth is the easiest answer. Look up whateverred.kext, that is the only effort I know of.

It's not an impossible task. The 5900HX should work if configured correctly and the Vega 8 also (now with WhateverRed).
