Are any of these mini-PCs I see pop up on Slickdeals/Amazon/Aliexpress capable of installing any flavor of Mac OS? I've been out of the Hackintosh game for a very long time (since 2007).

Yes, a number of AMD Mini-PC's from those Online retailers are capable of running macOS Sequoia.

Is there any Mini-PC in particular that you are looking at purchasing?
 
The key point is the GPU. Supported iGPUs are those from Intel up to (and including 10th gen) and Vega iGPU from AMD, so up to Ryzen 5000 or Ryzen 7x30 (no other ending)—in either case, these are older generation products.
Otherwise you'd need to install a suitable dGPU in the mini-PC.

Of course, with x86 support likely to b edropped by macOS in the near future, a genuine Mac mini should be carefully considered over a hack.

You know what, I think you're right. Just saw that there are drop-in third party nvme's for the new M4's, that's probably the route I'll take. Thanks
