Issues booting when updating OC

Currently on OC 0.6.3 and trying to upgrade to 0.7.4 but can't get it to boot - it seems to crash and reboot at random points in the boot process or soon after it's done booting (one time I managed to sign in and open an app before it crashed).
Another issue is that I can't update big sur from 11.1 (it reboots into a new boot entry "Macintosh HD" and gives [EB|#LOG:EXITBS:START]). I assume this is because of a broken seal, and the recommendation is to upgrade OC to >0.6.4.

Where is your OpenCore.efi? It's missing from the OC folder (0.7.4 EFI)

Its all there, just didn't include it because of file size limitations

I did a few more boots with logging enabled and every time the last lines are:

I've tried all the advice, but my situation is probably slightly different since boot actually continues after those lines show on the screen.
