First thing of note is that macOS Sonoma doesn't support NVMeFix.kext, so it needs to be removed or disabled before you try to upgrade to Sonoma.
Second is that the AMD Kernel Patches in your config.plist are too old to run Sonoma. You need to replace them with a copy of the current kernel patches, of which there are 22. Including editing the first FOUR (4) patches to work with your 6-core CPU.

Misc > Security > SecureBootModel should be set as Default, when using a T2 compatible SMBIOS, such as the MacPro7,1.
UEFI > APFS > MinDate and MinVersion should be set as '0', not '-1'. Using '-1' is not recommended.
Make these changes and see if that helps when trying to install macOS Sonoma.
