Help with AMD PC build for dual-boot (Windows + Ryzentosh)

It's been a long time since I was a Windows user. Due to design-related work, I had to switch to macOS. Now, I'm returning to the desktop PC world, and I feel pretty lost.

I would like to set up a dual-boot system with both Windows and Ryzentosh on an AMD build.

I’m considering these two build options:

--- Option 1 ---

Processor: AMD Ryzen 7 7800X3D 4.2 GHz/5 GHz
Motherboard: MSI PRO B650-S WIFI
RAM: 32GB DDR5
Graphics card: RTX 4070 Super 12GB

--- Option 2 ---

Processor: AMD Ryzen 9 7900X 4.7 GHz
Motherboard: MSI MAG B650 TOMAHAWK WIFI
RAM: 32GB DDR5
Graphics card: MSI GeForce RTX 4070 Ti SUPER VENTUS 2X OC 16GB

Any recent Nvidia dGPU is a non-starter for a Hackintosh system. You need to use an AMD dGPU, RX 6000 series for best results.
