Can I do the hackintosh?

This are my specs:
Ryzen 5 5600x
Gigabyte Aorus Elite A520
16GB ram DDR4 3000mhz
GTX 1060

I know I can't install the newer versions of macintosh because nvidia, so what I want to know is: What version can I install? Will my setup work? Can I dualboot with windows? And if my system works, can someone pls link here the best guide? I'm new to this amd hackintosh thing so it would be really helpful
