Big Sur Working but bug on updates

Hello,
I have made Big Sur working.
But when I tried to update, I got issue, it created a new HD on opencore boot an only the old HD works.
My config:
CPU
AMD Ryzen 5 2600
RAM
16,0 Go Single-Channel Unknown @ 1050MHz (15-15-15-36)
Motherboard
Micro-Star International Co. Ltd B450 GAMING PLUS (MS-7B86) (AM4)
Graphics
4096MB ATI Radeon RX 570 Series (XFX Pine Group)
Storage
232GB Samsung SSD 840 Series (SATA (SSD))

I attached my config.plist and a photo of my opencore boot




MinOsX is the working one and Macintosh HD have been created after the update try.
I tried to reset NVRAM many times.

If you have any idea what I did wrong, thank you!

Macintosh HD is the update partition. Boot from here and it'll run the update.

However, first update your OpenCore and kernel patches or you won't be able to run the update. The patches / OpenCore version you're using are incompatible with the latest version of Big Sur.
 
Thank you for your help, when I update the patches/Open Core, nothing works any more

Compress and upload the full EFI folder.

I used OC auxiliary Tools to update. but with it, my SSD disappear from the boot device.
I attached both working and not working

Here you go. Updated to OpenCore 0.7.6 with the latest patches.

Now I will try the update, but my connexion is slow, it will take hours...
To update, You make it by hand or with a tool?
 
I update EFI folders using PlistEdit Pro and OCConfigCompare from CorpNewt.
