Don't only run the OSs from separate drives, make them have separate EFI partitions. Install them with one SSD in the system at a time and then add the 2 together and set opencore to boot first. Windows won't mess with your mac os efi on updates that way, and if you leave opencore unbootable you...
I suggest an x570 motherboard you like and a sabrent m2. Samsung 970 evo plus works fine except for booting fast. The sabrent is miles ahead because of some weirdness. Here's my build
