So TLDR, created a bootable USB installer, mounted the EFI partition on the USB installer, added the EFI folder containing the latest OpenCore and all the updated versions of the kexts I use. Copied the same EFI folder into my install SSD's EFI folder - reboooted and tested launching the USB...

I found an alternative app, called IINA, it's open source and very lite/nice to use, hope this helps someone. It works flawlessly, even when skipping back and forth multiple times.

My EFI has different hardware to yours, you have a X570, I have a B450i, your best bet is to just make an EFI from scratch, it isn't difficult, you just need to use the guide and have ProperTree installed, that's it. It takes around 45mins to an hour the first time you do it. Use this...
