I gave it a whirl while upgrading my OpenCore setup, but it still says "3,6 GHz 8-Core Intel Xeon W". I didn't add any boot arguments (used the kext Aluveitie linked). Oh well.

Final update: in the end I just disconnected the macOS drive again + all other drives formatted for use in macOS and nuked the entire drive. Every Windows boot was a "installing updates / can't / removing updates" loop, so I formatted the drive and installed with the latest ISO of Windows. Just...

Check your ScanPolicy setting in the config.plist (set it to 0 to see if your devices turn up).

(spitballing here) Are there any weird energy related settings in the bios or (once booted in macOS) things selected under Energy Saver? There's "Start up automatically after a power failure" (it's off on my system) or computer sleep times you could check (mine is set to never).

How long does it hang for? On my system it pauses for about... ten to fifteen seconds on the System Integrity Protection (SIP) message but then continues without a hitch. Add -v to your boot arguments to temporarily get messages to see where it hangs.

I can't really tell but are you using Chrome? If so, try disabling hardware acceleration in the settings. I had random freezes before I disabled that. However, in my case that only led to freezes within Chrome, not in the OS itself, so your mileage may vary... Still a simple thing to try...

If you've used Time Machine (on an external drive) or have some other recent full backup, you could try building an OpenCore boot stick, to see if you can get it to work. Then reinstall from Time Machine? But before that: remember any bios upgrade resets all your settings - I wonder if there...
