I tested my iPad now with my computer and yes, Handoff is up and OK. Maybe not as snappy as a real Mac, but it's there.

A few months back I used to go over my EFI and config.plist using the Sanity Checker, which usually got everything right.
But when I did my Upgrade to OC 0.6.9 and Big Sur, I was surprised to find that there was no Sanity Checker update since the 0.6.6 release.

Well the CPU portion would be able to work but the iGPU wouldn't have full acceleration in macOS. But check out this cool thread from someone who nearly has Vega 3 acceleration on his Atari VCS:

Just take your time to read through the guide carefully, there's a section for Windows, macOS and Linux users. So just make sure you somewhat know in which direction you're heading.
It was a hassle for me the first time around, but with time and dedication you'll be just fine!

Well I still have a free subscription through my iPad purchase so yeah no freebie ****. But I could try out a different episode (a later one or so).
But yeah that was with my RX 6900XT.
EDIT: Episode 5 of Long Way Up also runs without issues! Just scrubbing through was no problem.

A question about your EFI: Why...
Well I have a Crosshair VIII Formula (basically same configuration) and I still use Whatevergreen with the agdpmod=pikera boot arg, even on OC 0.6.9 and Big Sur 11.4. I’m not sure what you’re doing on your setup, I’ve been able to not use ApplMCEReporterDisabler on Ryzen for my whole Hackintosh...

Well it depends on what the config is you have. The Ryzen 4000 APUs will only work in combination with a discrete Radeon GPU, of which at this time only consists of the Dell G5 SE and the MSI Alpha ones. NVIDIA is a no-go of course and the iGPU sadly hasn’t had support ever.
@Shaneee probably the weird-factor here is smart shift messing with the CPU/GPU connection or communication. But that should not be the limiting factor.
Uhh that COULD be possible as the MX350 is Pascal. So High Sierra is an option. But have a look beforehand if the MX300 series work in macOS.
But don't take my word for it. So please check. It could be doable.
What is your budget for these parts? Sorry to be plain but that looks like a poorly compiled list of parts. I can happily help you with this task but we need to know ideally what your location and budget is.
