I am writing this post for the person who is searching through different Fora and Google for a solution with similar spec'd hardware.

The following hardware is used:

CPU: Ryzen 2700x
MoBo: X470 AORUS ULTRA GAMING
GPU: Radeon RX 580
Memory: 32GB DDR4
SSD: 1TB Samsung 860 Evo
PSU: EVGA 750 GQ
WIRELESS & BT: Fenvi T-919
BOOTLOADER: OPENCORE

How stable is it?
Stable enough for everyday usage. I am working mostly with Adobe and Sketch and I am very happy of the stability so far. Airdrop, Handoff, Continuity, Sidecar, etc. all work fine.

What is NOT working?
Sleep.
Type-C port on the motherboard.

Fixed all non-working issues.

Try checking your USB ports if there are USB2.0 devices plugged in on 3.0 or 3.1. Plug them on USB 2.0 strictly. That's what fixed sleep for me on a MSI X370 and B450 chipsets.

Fixed. Now working as intended.

Update to Big Sur didn't show particular problems. Everything works under the new OS pretty good.

At the time of writing, I sit on F51.

F60c gave me problems when booting.

Hello!

I have also Aorus X470 ultra gaming, CPU Ryzen 7, AMD R9 380 graphics, BIOS version F51 , recommended BIOS settings, I have used EFI folder You have provided,
but my computer already freezed twice, after reset I could see this, please help, what is the reason of this:

Another try and success now! I have downloaded BigSur 11.2.1, prepared USB bootable again, put EFI folder and installed OS.

Hey just a small update.
I have managed to upgrade to bios version F63a, for this you will need to use the latest EFI from my Github.
Keep CSM support disabled.
Try 4G Decoding To Enabled/Disabled. I have mine set to disabled.

What I also did was a manual mapping of the USB Ports using Dortania guide and Hackintool. However I have a few hickups there. 😀
If you are not sure how to do that:
  1. Install USBInjectAll kext
  2. delete USBPorts.kext and everything from ACPI folder

I have tested the EFI on BigSur and it works there as well.
I am currently sitting on Monterey 12.3.

I have managed to get Sidecar to work but it's quite buggy.
I have managed to get Universal Control to work

Thank You man for new EFI! I have succesffully installed OSX Monterey with it , still on F51 Bios version. ! But my ethernet was not working. I compared
new EFI with old one and SmallTreeIntel.kext was missing there, just copied to new one and working !

I will test the stability of this OS, hopefully it will not freeze as BigSur.

changed graphics to AMD 7850 and no crashing, seems to be hardware issue, tried to to dissassemble R9 380, may be overheating

How did you managed to fix the issue with AppleIGB that the NIC keeps disconnecting randomly ?
