CPU should work fine. I'm unsure about the GPU. Only way to see is to try it. Follow the Dortania guide for Zen.
The GPU RX6600m will work as it is the same GPU as the Desktop. Also both the desktop RX 6600 XT and the mobile 6600m have the same Device-ID and that is important.
The problem is not that the combo is compatible component wise. The problem is the Ryzen IGPU. From all of the Ryzen + 6600m laptops on the market there is ONLY 1 that may work for a perfect Hackintosh with Montery 12.1. That is the Lenovo Legion 5. The reason is that is the "ONLY" laptop with a MUX switch. By having a mux switch you can disable the Vega IGPU and only use the dedicated GPU. Therefore you will just have the CPU driven by the DGPU and not going through the internal vega. Any other AMD machines that may work are, look below
1. Alienware Area 51m R2 Desktop Intel 10th series CPU and the RX 5700m (very rare with the AMD GPU, somebody on Reddit got it working)
2. Alienware M17 R3 with an 10th Intel CPU and the RX 5500m
3. Acer Predator Helios 500 Deskto Ryzen 7 2700 (no IGPU) and the RX Vega 56. (Same SKU and the Imac Pro 2017)
4. Asus GL902zw Ryzen 7 1700 (Desktop) and Desktop RX 580
