I've used macOS in various incantations since the 1980s - my old business partner wrote software for the Apple Lisa many years ago. I am quite impressed by Apple Silicon and may buy one soon but these are just low-end models and I would love a Mac Pro class machine. My current Windows desktop is Mac Pro class and I only built it two months ago and it meets my needs; but it's running Windows and I'd rather it run macOS. My requirements:
My Cougar 10700 typically runs at about 15-20 percent capacity and typical temperatures are 27-33 degrees on the CPU. I don't do any gaming so I only need a cheap GPU. I do plan on doing some video transcoding but the amount of time it takes doesn't matter. I could just run it on a virtual machine using one or two cores and leave it running for a long time.

- Significantly better performance than i7-10700
- Power-efficient
- Runs cool (I would just use a good air cooler)
