Help with Big Sur installation/upgrade - Stuck on [EB|#LOG:EXITBS:START]

Hello everyone,

I'm having a boring problem during a fresh install or just during an upgrade of the current Catalina (10.15.7) installation, I'm stuck on opencore early boot always with the same error [EB|#LOG:EXITBS:START].
I have tried almost every EFI configuration and I don't know what to do anymore.
The last configuration tried is the cleanest with the guide: https://dortania.github.io/OpenCore-Install-Guide/AMD/zen.html but always with the same error...

My configurtion:
CPU: Ryzen 9 3900X
Motherboard: Gigabyte X570 AORUS ULTRA (bios F31e)
RAM: (4x8GB) Corsair Dominator Platinum RGB 3200MHz
Audio: ALC1220
GPU: NVidia RTX 2080ti (Windows) & AMD RX570 (macOS)
OS: Windows 10 20H2 (Corsair MP600 1TB) & macOS Catalina 10.15.7 (Samsung 970 Pro 512GB)

Attached you can find the OpenCore logs, maybe someone of you has already find a solution or can help me to find one :)

If you haven't done already, upgrade to OC 0.6.3 with all kexts that released with it and the latest kernel patches.
Check if it is stable with Catalina
If it is, go ahead with the Big Sur upgrade from the same OS as any other OS update.
If that doesn't work please share the EFI

Finally after some test, I have found the problem :)
With the Gigabyte motherboard the SetupVirtualMap and also the Above 4G need to be false
