There is very little documentation of the entry for MemoryFormFactor, beyond what is simply stated in the docs:
MemoryFormFactor
Type: plist integer, 8-bit
Failsafe: OEM specified
SMBIOS: Memory Device (Type 17) — Form Factor
Description: Memory form factor. On Macs it should be DIMM or SODIMM.
When I populated my entire board (4 x 16 GB) recently the memory was correctly recognised, but I immediately had a number of weird problems (minuscule freezes, general responsiveness issues) that went away when I returned to the 2 stick setup I had before. (I used the MacProMemoryNotificationDisabler.kext to suppress the error nag on my MacPro7,1 'tosh)
Anyway, I'm fine with 32 GB but this entry got me thinking what the use of MemoryFormFactor is, if anything. And more importantly, how you set it.
