Can't start installer; black screen, then reboot

I'm having a problem while trying to install Catalina on my setup. I pretty much have a complete setup, already asked people on Discord for help but sadly, no reply, so I'm asking here.
What happens is that OpenCore starts normally, I am able to pick my OPENCORE partition and boot into it. Except no. All I get is a completely black screen, and after a few seconds of waiting, some logs I'm not really capable of reading (they're pretty cryptic, afaik this is how release logs look like, except I'm using the debug version of OpenCore), and then it reboots. I don't get into an installer, nothing.

I already reviewed the logs that are dumped into the root of my flash drive, but I can't find any errors there. This is the last 30 lines from one of those log files.

and this point ↑ is where I assume it fails to boot, though that would be quite strange.

The logs that I get on the screen after the black screen don't match up with the above. As I said, they look like release version logs, and I'm not able to read them. I was able to take a photo and re-write the topmost part of the logs, but right after that a much longer part flashes for a split second before it reboots.

I'm not sure what that Err(0xE) means, as I said I can't read these logs as they're not human readable.

Over on Discord I was told to run my config.plist through the sanitizer, and review my BIOS settings. I edited the BIOS config to match the recommended settings, but it still won't budge.
I also read through the general and OpenCore troubleshooting pages on the OpenCore desktop guide, but my issue wasn't listed there, hence why I'm asking here.

Any ideas or clues as to why this might be happening?

Sure, I edited the original post to include it.
It seems like since yesterday there was a new release of OpenCore, maybe updating would help.

Yes update your OC to 0.5.8. Remember to replace OpenRuntime.efi and BOOTx64.efi also.

Nope, doesn't seem like that helped… same behavior, still reboots after a black screen. Here's my config.plist adapted to OpenCore 0.5.8.
